Cheesy Broccoli Soup

What a dreary kind of day! No sunshine at all...and it sure looks like it will rain very soon. It's the kind of day that has me craving soup. This one was requested a few days ago by my youngest as it is her favourite at Tim Horton's. Of course, as much as I also enjoy their version and indulge often when I am out and about, I have a home-made recipe I have perfected over the years, that is just as delicious and certainly healthier. Here it is, give it a try and let me know what you think.

Cheesy Broccoli Soup

*serves 6-8

Ingredients:
1/2 cup water
3 small heads broccoli, washed and chopped (trim stalks, chop and set aside)
4 cups chicken broth (home-made is always best)
1 medium onion, skin removed and chopped
1 cup skim milk
2 tbsp unsalted butter
2 tbsp flour (white or whole wheat)
1 1/2 cups shredded medium or sharp cheddar cheese
1/4 tsp salt
good grinding black pepper
*more shredded cheddar for garnish if you wish

Directions:
-bring water to a boil in a medium pot, add broccoli florets, cover and steam 5 minutes
-drain in a colander and run under cold water to blanch (to retain nice green colour),set aside
-in same pot heat chicken broth, broccoli stalks and onion, and bring to a boil
-turn heat down to low and cook for 30 minutes
-add half of the steamed broccoli florets and cook another 5 minutes
-remove from heat and puree well with an immersion blender
-heat milk in microwave for 1 minute
-in soup pot melt butter on med-high heat, add flour and whisk for 1 minute, then slowly add milk, whisking constantly for about 3 minutes
-reduce heat to medium and slowly add pureed mixture continuing to whisk or stir to combine well
-add shredded cheese and stir well until melted
-add salt and pepper, adjusting to your tastes
-add remaining broccoli florets, heat for 5 minutes
-ladle into individual soup bowls, top with more shredded cheddar and serve
